About the Role
This is a unique opportunity to join an internationally recognised brand at its launch stage in Melbourne. You will be working in a structured, process-driven kitchen focused on authentic flavours, consistency, quality and efficient service.
Successful candidates will play an important role in establishing kitchen operations and maintaining Bikanervala’s food standards from the beginning.
Key Responsibilities
Prepare and cook authentic Indian menu items in accordance with Bikanervala brand standards
Maintain consistency, portion control, quality and presentation
Prepare traditional Indian sweets and Mithai where applicable
Perform efficiently under high-volume service conditions
Maintain high standards of kitchen hygiene and food safety compliance
Follow standard recipes, preparation methods and operational procedures
Support kitchen setup and operational systems during the opening phase
Work collaboratively with the wider kitchen team
What We’re Looking For
Minimum 2 years of previous work experience with Bikanervala is mandatory
Certificate IV in commercial/Asian cookery or equivalent ? ?
Strong hands-on experience in the relevant specialisation, including Indian Sweets/Mithai, Tandoor, South Indian, Indo-Chinese or Indian cuisine including chat.
Strong understanding of Bikanervala recipes, preparation methods, quality standards and kitchen processes
Ability to maintain authentic taste, consistency and presentation
Strong work ethic and ability to handle busy service periods
Ability to work efficiently in a high-volume commercial kitchen
Team player with a professional and positive attitude
Commitment to maintaining high standards of food quality, hygiene and consistency
