Operated by Pavoni Plus Pty Ltd, the team behind a’Mare Sydney and part of the Maestro Hospitality group, Cibaria Manly is a bustling 350-seat restaurant offering à la carte dining, group bookings, functions and events.
Our menu celebrates the diversity of regional Italian cuisine through antipasti, pizzetta, pasta, premium produce and traditional Italian desserts, supported by an extensive wine program with a strong focus on Italian varietals alongside carefully selected Australian, French and Italian wines, of course.
We are seeking an experienced Section Waiter / Sommelier to join our professional front-of-house team in a full-time capacity.
This is an opportunity for an experienced hospitality professional to take ownership of a section while bringing strong wine knowledge, polished service skills and genuine Italian hospitality to every guest experience.
About the Role
As a Section Waiter / Sommelier, you will be responsible for managing a designated section during lunch and dinner services while providing knowledgeable food and wine service.
You will work closely with the restaurant management, sommelier, bar and kitchen teams to deliver an efficient and memorable dining experience in a high-volume premium restaurant environment.
Key Responsibilities
Independently manage a designated restaurant section during lunch and dinner service
Deliver professional food and beverage service from guest arrival through to departure
Provide knowledgeable recommendations regarding menu selections, beverages and food and wine pairings
Demonstrate strong knowledge of Italian wines, wine-producing regions, varietals and regional Italian cuisine
Present, open, decant and serve premium wines using recognised professional service techniques
Take accurate food and beverage orders and ensure efficient communication with kitchen and bar teams
Explain menu items, ingredients, preparation methods, seasonal dishes and daily specials
Monitor tables throughout service and anticipate guest requirements
Maintain appropriate wine and beverage service throughout the dining experience
Assist with wine cellar organisation, stock rotation and wine service preparation
Maintain glassware, service stations and restaurant areas to a consistently high standard
Process guest accounts and payments accurately
Manage guest enquiries, dietary requirements, special requests and service recovery professionally
Work collaboratively with chefs, sommeliers, bartenders, runners and restaurant management
Support and mentor junior front-of-house employees
Assist with restaurant opening and closing procedures
Maintain high standards of personal presentation, hygiene and professional conduct
Comply with NSW Responsible Service of Alcohol requirements, food safety standards and workplace policies and procedures
Skills, Qualifications & Experience
To be considered for this position, applicants must have:
A minimum of 1–3 years of relevant professional experience in a premium, high-volume or fine dining restaurant environment
Relevant hospitality qualifications and/or equivalent demonstrated industry experience
Demonstrated experience independently managing a restaurant section
Strong knowledge of professional food and beverage service
Sound knowledge of wine, wine regions, grape varietals and food and wine pairing
Knowledge of Italian wines and regional Italian cuisine
Experience presenting, opening, decanting and serving premium wines
Strong knowledge of restaurant sequence of service and table service standards
Excellent verbal and written English communication skills
Excellent interpersonal and customer service skills
Strong attention to detail and professional presentation
Ability to remain organised and composed in a high-volume restaurant environment
Ability to work effectively as part of a professional front-of-house team
Full Australian working rights or the ability to obtain appropriate Australian work rights
A current NSW Responsible Service of Alcohol (RSA) Certificate, or the ability to obtain one prior to commencing employment
Availability to work a rotating roster including evenings, weekends and public holidays
The ability to meet all employment, venue and regulatory compliance requirements applicable to the position
Highly Desirable
The following will be highly regarded:
Formal hospitality qualifications
WSET Level 2 or higher, or an equivalent recognised wine qualification
Previous employment within a premium Italian restaurant
Advanced knowledge of Italian wine regions and varietals
Knowledge of traditional and regional Italian cuisine
Experience using SevenRooms, Micros or similar restaurant reservation and POS systems
Italian language skills
