Position Purpose

Kaffeine Cafe requires a qualified and experienced full-time Baker to undertake the preparation, production and baking of bread, rolls and other baked products for the cafe.

The Baker will be responsible for managing the bakery production process from ingredient preparation and dough production through to baking, cooling, finishing and storage of finished products.

The position requires technical baking skills, an understanding of dough preparation and fermentation, consistent production standards and compliance with food safety and workplace health and safety requirements.

Key Duties and Responsibilities

Prepare, weigh and mix ingredients for breads, rolls, pastries and other baked products.

Knead, cut, mould, shape, prove and prepare dough for baking.

Monitor fermentation, proofing times, oven temperatures and baking times.

Operate commercial mixers, ovens and other bakery equipment safely.

Bake and finish breads, pastries and other bakery products to required quality standards.

Check finished products for quality, size, texture, colour and presentation.

Plan daily bakery production according to customer demand and operational requirements.

Monitor ingredient stock levels and assist with ordering and stock rotation.

Develop and trial new bakery products and seasonal items where required.

Maintain consistent recipes, portion sizes and production standards.

Maintain clean and hygienic bakery equipment, utensils and work areas.

Comply with food safety, allergen management and workplace health and safety requirements.

Minimise ingredient wastage and maintain efficient bakery production.

Assist with training junior staff in bakery production procedures where required.
