FIRE & SALT Pty Ltd trading as Catering HQ Nelson Bay is looking for full-time Restaurant Manager and Conference and Event Organiser for their busy venue at Nelson Bay Bowling Club.
Nelson Bay Bowling & Recreation Club is a vibrant community-focused venue located along the scenic waters of Port Stephens in New South Wales, offering a welcoming space for sport, leisure, and entertainment. With over 50 years of history, the club is popular among both locals and visitors, featuring lawn bowls facilities, social and competitive events, dining options, and function spaces for celebrations and corporate gatherings. Known for its inclusive atmosphere and strong support of local sporting, charity, and community initiatives, the club provides a relaxed environment where people of all ages can connect, unwind, and enjoy a range of activities.
To be considered for the role you need to have a relevant industry qualification and upto 2-3 years' experience in a similar position.
To be considered for the Restaurant Manager role, you will need to demonstrate the following skills and experience:
-Planning menus in consultation with Chefs
-Planning and organising special functions
-Arranging the purchasing and pricing of goods according to budget
-Ensuring dining facilities comply with health regulations and are clean functional and of suitable appearance
-Conferring with customers to assess their satisfaction with meals and service
-Service recovery
-Creating service standard templates and standard operating procedures
-Controlling, selecting, training and supervising staff
-Taking reservations- Meet, great and seat guests
-Assist in taking orders
-Assist with staff hiring and train
-Examining foodstuffs to ensure quality
-Assist with planning menus and special dietary requirements for guests
-Discuss customer requirements with the culinary team, determining product mix, stock levels and service standards
-Formulating and implementing purchasing and marketing policies, and setting prices
-Promoting and advertising the establishment's goods and services
-Selling goods and services to customers and advising them on product use
-Maintaining records of stock levels and financial transactions
-Undertaking budgeting for the establishment
-Ensuring compliance with occupational health and safety regulations.
To be considered for the Conference and Event Organiser role, you will need to demonstrate the following skills and experience:
-Promote conferences, corporate events, weddings and private functions at Nelson Bay Bowling Club to increase venue utilisation and revenue.
-Respond to client enquiries on venue hire, catering packages, beverage services, audiovisual equipment, room layouts and costs.
-Meet clients to confirm event objectives, attendance numbers, budget and service needs, and prepare tailored proposals to Catering HQ standards.
-Plan, organise and coordinate events from concept to delivery, integrating venue operations, catering and front-of-house staffing.
-Arrange and coordinate conference facilities, catering, beverages, signage, décor, entertainment and supplier access to match event specifications.
-Prepare run sheets, floor plans, staffing schedules and timelines, and brief kitchen, bar, service and operations teams.
-Manage event registrations, guest lists and seating plans for conferences and large-scale functions when required.
-Develop budgets, prepare quotations and contract, and track expenditure to meet approved budgets and agreements.
-Negotiate service scope and pricing with clients and approved suppliers, ensuring viability and compliance with company pricing policies.
-Attend events on-site to coordinate setup, service delivery and pack-down, and resolve operational issues promptly.
-Ensure conferences and events comply with WHS, food safety, liquor licensing and insurance requirements at Nelson Bay Bowling Club.
-Manage client feedback and complaints during and after events, and complete post-event evaluations for improvement and repeat business.
-Maintain accurate records of bookings, communications, contracts and financial documents to meet business and audit requirements.
-Perform other related duties consistent with the Conference and Event Organiser role to support Catering HQ’s regional operations.
