Pastry Cook

We, Rams Food and Patisseries, are a Homebush West NSW–based establishment dedicated to serving authentic South Indian and Sri Lankan cuisine. Our mission is to provide our customers with traditional dishes that reflect the rich culinary heritage of South India and Sri Lanka. However, despite our passion and commitment, we are facing a significant challenge due to the unavailability of a highly specialised cook with expertise in traditional South Indian and Sri Lankan sweets, savouries, cakes, and pastry products. To meet the growing demand for these specialty items, we are seeking an experienced South Indian Sweets, Savouries, Cakes and Pastry Cook to join our team.

Position Overview

The successful candidate will be responsible for preparing a wide variety of traditional South Indian and Sri Lankan sweets, savouries, cakes, and pastry items while maintaining high standards of quality, authenticity, and food safety.

Key Duties and Responsibilities

Preparing and cooking a variety of traditional South Indian and Sri Lankan sweets such as Mysore Pak, Laddu, Jangri, Gulab Jamun, Kesari, Halwa, coconut-based sweets, and milk-based desserts.

Preparing South Indian savouries including Murukku, Mixture, Ribbon Pakoda, Seedai, Thattai, Vadai, and other traditional snack items.

Preparing traditional South Indian cakes and baked desserts, including eggless cakes, rava cakes, milk cakes, sponge cakes, and festive specialty cakes commonly served in South Indian bakeries.

Preparing traditional pastry and bakery items inspired by South Indian and Sri Lankan bakery traditions such as puffs, sweet buns, coconut buns, cream pastries, fruit pastries, and other baked dessert products.

Measuring, mixing, and preparing ingredients according to traditional recipes and cooking techniques.

Preparing batters, doughs, syrups, fillings, and sweet bases used in sweets, savouries, cakes, and pastries.

Monitoring cooking temperatures and baking processes to maintain consistent taste, texture, and presentation.

Decorating cakes and pastries to ensure attractive presentation and traditional styling.

Maintaining high standards of food safety, hygiene, and sanitation in the kitchen.

Managing stock of ingredients used in sweets, savouries, cakes, and pastries and ensuring proper storage and rotation of supplies.

Assisting with menu planning and introducing new traditional desserts and bakery products.

Ensuring sufficient daily production to meet customer demand, especially during festive and busy periods.

Skills and Experience Required

Proven experience in preparing South Indian or Sri Lankan traditional sweets, savouries, cakes, and pastry products.

Strong knowledge of traditional ingredients, baking techniques, and preparation methods.

Ability to work efficiently in a busy kitchen environment.

Knowledge of food safety and hygiene standards.

Strong attention to detail and commitment to maintaining authentic flavours and quality.

Salary

$80000 per annum plus Superannuation
