About the role:
Our Central Kitchen Manager - Will manage, with a hands-on approach, the food production operations of the Bundaberg and Gracemere Central Production Kitchens to provide quality and choice in' Cook to Chill' meals for Blue Care residents and wider user groups.
In this role, you will:
Actively provide support to the strategic Hospitality plan.
In conjunction with the Resident Experience Manager, ensure that all menus have been nutritionally assessed and menu reviews involve and include resident involvement.
Recipes are trialled and tested using the available resources at the sites, and production staff, along with the target audiences, are actively engaged in the process.
In conjunction with the Resident Experience Manager, participate in the development and monitoring of recipes in line with standard production practices. This will include the use of software where applicable and also require the monitoring of nutritionally balanced meal production.
Provide support and technical skills to CPU based personnel in relation to Cook Chill processes and systems, including recruitment, training and ongoing professional development of staff.
Provide support and technical skills to site based personal in relation to Cook Chill processes and systems including product regeneration and quality.
Effectively communicate with all stakeholders keeping in mind "cause and effect" of changes implemented by you- team.
Effectively manage food safety plan compliance for the Bundaberg CPU.
Report to the Resident Experience Manager on non-compliances and incidents and action taken to rectify.
Report to the Resident Experience Manager on Bundaberg CPU financial performance KPI's.
Control stock management procedures in line with best industry practices
Support the procurement function to maximise the returns for the organisation.
Ensure that all Central Production Kitchen equipment including transport and delivery vehicles are maintained as per service specifications and timely preventative maintenance is carried out in conjunction with the Maintenance Services.
Ensure that the work carried out is in keeping with the Blue Care Food Safety Manual and safe practices as per relevant WH&S legislation.
Assist with and also drive the implementation of Quality Feedback Tools to capture and review end user satisfaction levels in consultation with the direct report and organisational resources.
Essential Qualifications & Licences:
Qualified Chef at Senior Sous Chef, Executive Chef, or equivalent level
A relevant trade or operational qualification (e.g. Certificate III Commercial Cookery or similar), or equivalent supervisory experience
Minimum 3-5 years' experience within large-scale food service operations
Demonstrated experience managing commercial or institutional food production environments
Current Open Driver Licence
A sound knowledge of Cook Chill Operations - preferably within Institutional Facilities.
Knowledge and Experience:
A Sound knowledge of modern trends, and proven ability to implement these trends within Aged Care.
A sound knowledge of Food Safety - Compliance - WH&S - Food Safety principles, including implementing and maintaining a microbiological testing regime.
A proven ability to support Site Staff & Supervisors within a Complex Structure.
A proven ability to foster and enhance a Team Environment and work within the Values & Culture of the Organisation.
A proven ability to prioritise tasks and use of available resources to effectively manage the required outcomes.
Demonstrated effective interpersonal and written communication skills, including intermediate computer skills.
