Lead one of Sydney’s most exciting neighbourhood Italian restaurants.
Postino Osteria is looking for a seasoned, energetic and charismatic Restaurant Manager to take the lead at our Chef’s Hat-awarded neighbourhood osteria in the heart of Summer Hill.
This is an opportunity for an experienced hospitality leader who loves the floor, knows how to build a strong team and understands that exceptional restaurants are created through a combination of great food, great people and genuine hospitality.
Postino is part wine bar, part restaurant and part intimate events space, with a capacity of 136 guests and a strong neighbourhood following. Our style is relaxed and welcoming, but our standards are high.
We are looking for someone who can bring personality, structure, commercial awareness and leadership to the venue while continuing to build the warm, energetic hospitality Postino is known for.

The Opportunity
As Restaurant Manager, you will take ownership of the day-to-day operation of Postino Osteria and lead the team from the floor.
You will be responsible for:
Leading, motivating and developing the FOH team
Creating a warm, energetic and memorable guest experience
Being a visible and engaging presence on the restaurant floor
Building genuine relationships with regulars, locals and new guests
Overseeing daily restaurant operations and service standards
Recruiting, training and developing team members
Managing rosters, labour and operational costs
Driving revenue while maintaining strong cost controls
Working closely with the kitchen and senior leadership team
Overseeing reservations, group bookings and events
Maintaining strong knowledge of the food, wine and beverage program
Ensuring RSA, WHS and operational compliance
Managing guest feedback professionally and confidently
Supporting the continued growth, reputation and performance of Postino Osteria
About You
We are looking for an established hospitality professional who combines strong operational capability with personality and genuine warmth.
You will have:
1-3 years experience in a Restaurant Manager or similar senior restaurant leadership role and/or Hospitality Certificate / Diploma or equivalent
Strong experience within quality, premium or high-volume restaurant environments
A genuine passion for Italian food, wine and hospitality
Strong leadership skills and the ability to inspire and develop a team
Exceptional communication and rapport-building skills
A natural ability to remember faces and create meaningful relationships with guests
Strong commercial awareness and understanding of hospitality cost controls
Confidence managing labour, rostering and operational performance
Strong computer literacy and experience with restaurant management systems
Experience using restaurant POS systems
Excellent attention to detail
The ability to stay calm, solutions-focused and professional under pressure
Excellent personal presentation and grooming standards
A current NSW RSA
Full Australian working rights
Fluent English communication skills
Highly Regarded
Strong Italian food and wine knowledge
Formal hospitality management qualifications
Formal wine studies or WSET qualifications
Experience with SevenRooms or similar reservation platforms
Experience managing functions, events or large group bookings
Italian language skills
