Daly Waters Pub is situated 620 kilometres south of Darwin, at the intersection of the Carpentaria and Stuart Highways.

Built in 1930, it is now one of Australia’s most iconic Outback pubs, attracting tens of thousands of visitors each year.

The bistro is open daily from 11.00 am to 8.30 pm for lunch and dinner. The menu caters for steak lovers and customers wanting to try crocodile, kangaroo and buffalo. Vegetarian meals and special dietary requirements are also catered for.

About the Role

• cleaning and sanitising dishes, benches, floors, equipment, and scullery areas to meet hygiene standards

• basic food preparation: wash, peel, chop vegetables, portion ingredients, assemble simple salads or sides, and assist with plating during service

• dishwashing and equipment care: operate commercial dishwashers, dry and store cookware, and report equipment faults

• stock and storage: rotate stock, label and date items, check fridge and freezer temperatures, and notify supervisors of low supplies

• waste and recycling: manage rubbish, compost and recycling according to procedures

• service support: restock the pass, refill condiments, and help chefs during rushes

• ensure all cleaning and sanitation practices comply with food safety (HACCP) standards

• adhere to WHS procedures and promptly follow instructions from the kitchen leadership team

Qualifications and Skills

• AQF Certificate I or equivalent qualification

• at least 2 years recent experience in a busy commercial kitchen

• sound knowledge and experience with food safety (HACCP) and work health and safety procedures

• proven ability to operate a range of commercial kitchen equipment

• capable of lifting heavy items (e.g., stock pots, rice bags, etc)

• ability to work according to the requirements of the position
