MLP Hospitality Group Pty Ltd t/a Don Gino is an authentic Italian trattoria and wine bar in the heart of West End, Brisbane. Our focus is traditional Italian cuisine made with quality ingredients, genuine hospitality, and a strong team culture. Don Gino are looking for an experienced and passionate Head Chef to lead our kitchen and help build a high-performing team.

About the Role

As Head Chef, you will be responsible for all aspects of kitchen operations, including:

• Prepare and cook authentic Italian and Sicilian cuisine to a consistently high standard.

• Ensure exceptional food presentation and quality control.

• Assist in planning and developing seasonal menus and daily specials.

• Manage stock ordering, rotation and inventory.

• Supervise and train junior kitchen staff.

• Ensuring compliance with HACCP and food safety standards.

• Work efficiently in a fast-paced commercial kitchen.

About You

To be successful, you will have:

• Applicant must have at least 1-Year of relevant employment experience

• Applicant will ideally hold relevant vocational or tertiary qualifications

• Strong knowledge of authentic Italian cuisine; Sicilian cuisine is highly desirable.

• Excellent organisational and communication skills.

• Ability to work under pressure while maintaining high standards.

• Availability to work evenings, weekends and public holidays.

• Food Safety Supervisor Certificate (or willingness to obtain)

• Full Australian work rights.

• Full-time permanent position (38 hours per week).
