About Us

The Rasoi Tandoori Indian Kitchen – Mount Martha is seeking an experienced and enthusiastic Chef to oversee kitchen operations within its busy and established restaurant. Located in Mount Martha on the Mornington Peninsula, the restaurant specialises in authentic Indian cuisine prepared using traditional cooking techniques and quality ingredients.

Operating seven days a week, the restaurant provides both dine-in and takeaway services to a diverse and loyal customer base. The business is committed to delivering consistently high-quality Indian cuisine and attentive service in a professional and fast-paced environment.

This position presents an opportunity for a qualified and experienced Chef with strong knowledge of Indian cuisine, sound culinary skills and effective kitchen leadership capabilities to contribute to the efficient operation of a dedicated kitchen team.

Key Responsibilities:

• Plan, prepare and cook a variety of Indian dishes, including curries, tandoori items, breads, rice dishes, entrées and desserts, in accordance with established recipes and restaurant standards.

• Plan and organise daily food preparation and cooking activities to ensure efficient kitchen operations and timely meal service.

• Develop and update menus in consultation with management, considering seasonal ingredients, customer preferences and food cost requirements.

• Estimate food and labour requirements and arrange the ordering and purchasing of food supplies and ingredients.

• Inspect the quality and freshness of ingredients and monitor prepared dishes to ensure consistency in taste, quality, presentation and portion control.

• Supervise and train kitchen staff in food preparation, cooking techniques, recipes, hygiene requirements and kitchen procedures.

• Monitor and regulate cooking equipment, including tandoors, ovens, grills and other appliances, to ensure food is cooked to the required standard.

• Ensure compliance with food safety, hygiene and workplace health and safety requirements throughout food preparation, storage and service.

• Monitor food usage and wastage and implement appropriate measures to maintain effective stock control and minimise waste.

• Liaise with management and front-of-house staff regarding food preparation, menu requirements and service coordination, particularly during busy trading periods.

• Maintain high standards of cleanliness and organisation within the kitchen and ensure all food preparation areas and equipment are properly maintained.

To be successful in this role, it is essential you have:

• Hold a Certificate III & IV or an equivalent recognised qualification.

• Have at least one year of relevant experience working as a Chef in a professional commercial kitchen environment.

• Demonstrated leadership and supervisory skills, with the ability to effectively train, guide and support kitchen staff.

• Extensive knowledge and practical experience in preparing authentic Indian cuisine using traditional spices, ingredients and cooking techniques.

• Ability to work efficiently in a fast-paced commercial kitchen while consistently maintaining high standards of food quality, taste and presentation.

• Strong attention to detail, creativity and commitment to maintaining high standards in food preparation and presentation.
