Ormeggio at The Spit is one of Sydney’s most recognised Italian fine-dining restaurants, located on the waterfront at d’Albora Marina in Mosman.

Awarded Two Chef Hats by the Good Food Guide since 2013, Ormeggio has built a reputation for refined Italian dining, exceptional seafood, polished service and a world-class hospitality team drawn from across the globe.

Alongside the restaurant sits a sophisticated cocktail offering and an award-winning wine program that has been a defining part of the Ormeggio experience since opening in 2009. With a strong focus on Italian wines, complemented by standout selections from France and Australia, the cellar offers an exciting platform for a Restaurant Manager who is passionate about food, wine and elevated service.

We are now seeking an experienced and ambitious Restaurant Manager to lead the front-of-house team and help shape the next chapter of Ormeggio at The Spit.

This is a senior leadership opportunity for someone who thrives in a high-performing fine-dining environment, leads from the floor and is passionate about developing people, driving standards and creating memorable guest experiences.

About the Role

Reporting into the senior leadership team, you will take ownership of the day-to-day front-of-house operation while working closely with the kitchen, wine and wider management teams.

You will be responsible for ensuring every service reflects the standards, warmth and attention to detail that Ormeggio is known for.

Your responsibilities will include:

Leading the daily operation of the restaurant and front-of-house team

Driving consistently high standards of service and guest experience

Managing, mentoring and developing FOH team members

Conducting pre-service briefings covering menu updates, daily specials, VIP guests and special events

Managing rosters, labour costs and wage performance

Monitoring operational and financial performance against budget expectations

Completing daily operational and financial reporting

Working closely with the kitchen team to ensure seamless service delivery

Supporting food, wine and service training across the FOH team

Managing staff performance, development and accountability

Maintaining strong relationships with key external stakeholders, including d’Albora Marina and Mosman Council

Supporting reservations, table management and overall guest flow

Contributing to the ongoing evolution and performance of the venue

What We’re Looking For

You are an experienced hospitality leader who understands the detail, discipline and energy required to operate at a high level.

Ideally, you will bring:

Full Australian working rights

Fluent spoken and written English

A current NSW RSA Certificate

Previous restaurant management or senior supervisory experience

Ideally 1–3 years’ experience within fine dining, hatted restaurants or a comparable premium hospitality environment

A strong working knowledge of food and wine

An appreciation of Italian cuisine, wine and hospitality

Experience preparing daily operational and financial reports

Strong commercial awareness, including rostering, wage management and cost control

Excellent communication and leadership skills

The ability to coach, motivate and performance-manage a diverse team

Confidence leading busy, high-pressure services

Excellent attention to detail and personal presentation

Availability to work a flexible hospitality roster including weekends and public holidays

Formal hospitality studies, including a Diploma of Hospitality or similar qualification, will be highly regarded.

Italian language skills are welcomed but are not essential.

Systems Experience

Previous experience with the following would be advantageous:

SevenRooms or another restaurant reservation platform

MobiPOS or another restaurant POS system

Restaurant reporting and labour management systems
