Full-Time Cook – Charcoal & Grill Experience

Employment: Full-time

Salary: $70000 – $80000 per annum + superannuation

Key Responsibilities

• Prepare, season and cook a range of menu items in a busy kitchen.

• Operate commercial cooking equipment including charcoal ovens/grills, gas burners, deep fryers, conventional ovens and other kitchen equipment.

• Prepare and cook meats, poultry, vegetables, sauces, marinades and other menu components.

• Manage charcoal cooking, including temperature control, fuel management and achieving consistent cooking results.

• Monitor cooking temperatures and food quality across charcoal grills, fryers, burners and ovens.

• Portion and present food consistently according to menu and business standards.

• Assist with preparation and implementation of new charcoal-cooked menu items.

• Maintain food safety, hygiene, cleaning and safe operation of cooking equipment.

• Monitor stock, food storage, preparation levels and ingredient rotation.

• Work efficiently during busy takeaway service periods and coordinate with other kitchen staff.

Skills and Experience

• Previous commercial cooking experience.

• Experience using commercial grills, burners, deep fryers and ovens.

• Hands-on experience with charcoal or solid-fuel cooking equipment is highly desirable.

• Experience with Spanish-style charcoal ovens such as Josper, Mibrasa or similar equipment will be highly regarded.

• Good knowledge of meat preparation, marinades, cooking temperatures and food safety.

• Ability to independently manage multiple cooking stations during service.
